Ah I saw up a bit what got your goat, and I don't blame ya a whit.  Its always really frustrating when shows/comics/novels end up going weirdly OOC with their characters.  I adored the first season of Spice and Wolf but in the second the female lead acted like her teeth had been removed so to speak.  (She is a wolf so the analogy works I swear.)
But at least with that one I had a good first season that told a complete story, I don't know if Once Upon a Time wraps up as well with each season.
